- 2 mature bananas
- 1⁄4 cup of vegetable milk without sugar or flavor
- 2 teaspoons apple cider vinegar
- 2 teaspoons pure vanilla extract
- 1 cup teff flour
- 2 tablespoons pure cane sugar
- 1⁄4 cup of chopped nuts
- 1 teaspoon of regular baking powder or no sodium
- 1⁄2 teaspoon of sodium bicarbonate
- 1⁄2 teaspoon of ground cinnamon
- 2 pinches of marine salt
- 10 to 15 raisins, soaked and drained
Instructions
- Preheat oven to 350°F. Cover a 8×4 inch anti-stick or silicone bread mold with parchment paper.
- In a bowl crush bananas with a fork. Add milk, vinegar and vanilla until well mixed. In another bowl, mix the following seven ingredients (up to salt). Add the milk mixture to the flour mixture; gently double until combined. Pour the dough into the prepared mold. Sprinkle the raisins over.
- Bake 40 to 45 minutes or until inserting a stick in the center, it comes clean. Let the bread cool completely before sliced.
