It has developed a bread enriched with peas protein and sugar-free jams in a project made with Tecnalia and two Basque companies

Bakeries and pastry shops Bizkarra is part of an innovative project to develop functional foods with nutritional properties. The project, in which he participates with Tecnalia and the companies Gastronomy Cantabrica and Cárnicas Ibarra, aims to market them from 2021. It is supported by the Basque Government through the Hazitek program of the SPRI Group.

 

The Basque initiative AKTIBAL aims to generate new specialties that respond to the growing demand for healthy foods in society in recent years. Its purpose is to contribute to improving the quality of life of people through a balanced diet that provides the necessary nutrients. The creation of these low functional foods in fats and sugars is aimed at reducing the incidence of obesity or cardiovascular disease. Bizkarra's participation in this R & D project is part of the innovation effort, aimed at unite food, quality and health.

“Developed products are a bread enriched with pea protein and jams apricot and raspberry natural and without sugar. Also developed within the project hamburger with improved lipidic profile which, by incorporating chia seeds, allows to reduce the proportion of saturated fatty acids and increase that of other healthier ones.”

These functional foods will be available to the general population, although they respond especially to the needs of people with diseases such as diabetes (such as sugar-free), with high cholesterol levels, or who consume few omega-3 foods (makes with improved lipid profile), as well as to the nutritional requirements of athletes (protein enriched bread).

Bizkarra has contributed to the project his knowledge of making bakery and pastry products and their experience in the development of new products. Previously he has come true, also with Tecnalia, other specialties like functional breads with soy and oats, artisan products enriched with vitamins and ice cream without added sugars. All created to maintain or improve well-being.
