We continue with the recipe…whatBecausemake a gluten-free pastry flour mix at home when you can buy it?The reasons are the same that I gave you with in the previous bread-making mix: the purchased ones are much moreThey are expensive and include ingredients that are not flour and that can affect the health of many people, such as dextrose.If you do it at home, in additions of saving money will haveIt's a 100% natural mix always at hand.

The proportions of this gluten-free bread mix varyeven with respect to breadmaking.To make the pastry mix you will needs:

  • 60% protein flour.
  • 40% starches.

In my case, I used the following mixture to obtain a kilo of flour:

  • 400 g of certified gluten-free oat flour.
  • 200 g of buckwheat flour.
  • 400 g of white rice flour.

Some people asked me on Facebook and Instagram about oatmeal.Oats are a cereal that by itselfdoes not contain gluten.However, not all oats are suitable for celíacos, because mostto be processed in fafactories where other cereals containing gluten are processed.That is why we have to buy certified gluten-free oats.I use this, but alsoI couldn'tis to find it in your herbalist or in large stores: Calefactor electrico

Anyway, if I didn't want tois to use oats, I can alwaysis yearadd the 400 g of another protein flour, as mores buckwheat, brown rice, chickpea flour…

To make this mix I use my Thermomix, but if I haveIf you use a good American type grinder or blender, you canis do just as well with a little patience.

Instead of buying oatmeal, I directly grind the rolled oats for 30 seconds on progressive speed 5 to 10.I do the same with white rice and buckwheat.

AfterIf you have the different ground flours, mix in a large container and stir well to integrate them all.Now you can make any recipe that asks for a gluten-free pastry mix, like the recipe for some delicious gluten-free muffins that I made a few days ago.ace and that I will publishsoon.
