Green beans also known as French beans or string beans are the healthiest, fresh to look at and the most versatile vegetable around us. These lovely long and tender beans are an excellent source of proteins, vitamins, antioxidants and other important nutrients.There are plenty of ways to cook green beans. These beans can be boiled, stir fried, steamed, sautéed or micro waved.

Instructions

  • Boiling or blanching green beans: Wash and cut the beans in long or short juliennes or any desired shape you wish. Boil them or blanch them for 3 to 4 minutes in salt water. Beans should not be over cooked as they may turn limp and soft. As a matter of fact, they should be crunchy, crisp and green to look at. You can also steam the green beans for a few minutes in a steamer. Drain and keep aside.
  • Stir fried beans: Heat a teaspoon of olive oil in a wok or a pan. At high flame add chopped garlic and sauté for few seconds. Add your boiled beans and sauté at high flame for a few minutes. Season with salt and pepper and serve. You can also mix in a medley of vegetables like baby corns, carrots, mushrooms and bell peppers for a colorful and healthy veggies meal.
  • Cheesy baked beans: Add a table spoon of flour with equal amount of butter and stir on a frying pan. Whisk in milk and shredded parmesan cheese to prepare a smooth white sauce. Add blanched beans and diced carrots to the sauce. Pour in a baking dish, sprinkle salt and pepper and cover with rest of the cheese. Bake in a preheated oven at 300 degree F for 20 minutes or till the cheese starts bubbling.
  • You can be innovative and experimental with your green beans recipes. Green beans can be added to fried rice, noodles, pasta or soups and cold salads to add a dash of health, color and good taste to the meal!
