Sushi which was popularized by Japan is now considered one of the best served delicacies across the globe. Sushi is originally a fish based recipe that is served with rice.

Hence the rice served with Sushi or the Sushi Rice holds immense importance in Japanese cuisine. Since rice is the main part of a sushi, it is important that the quality of rice should be close to perfect and it should be cooked in the most authentic flavor and texture.

To make the perfect Sushi rice, you need to buy the Japanese long grained sticky rice which has a little thick grain. It goes well with the Sushi. The stickiness of the rice helps in molding the sushi cakes in various shapes. Here is a simple but traditional Sushi Rice recipe that teaches you to cook authentic sushi rice.

  • Things you need: To prepare Sushi Rice, you need 2 cups of rice, one fourth cup Japanese rice vinegar, salt, sugar and seasonings, a few measuring cups, saucepan, strainers and wooden bowl and spatula.
  • Selection of Rice: The most important step before starting your rice preparation is the choice and selection of rice, needed for this recipe. For this you need to go for the original Japanese short grained sticky rice also known as Sushi Rice. Any other Asian or American rice will not do justice to the Sushi and would stand out instead of adhering to the sushi. The Japanese rice has the perfect starch to add the gloss and stickiness to the rice minus the mush and dryness. It is available in most of the Asian stores or can be sourced online.
  • Preparing Rice: Wash the rice in running water several times and rinse well in a strainer. Now soak the clean and washed rice in a bowl for at least 30 minutes. Put a pot of water( 2cups) to boil, on the stove. Add rice and cover the lid. After the first boil, lower the heat and let the rice cook in the steam for few minutes, till the water is completely evaporated and the rice is soft and fluffy. A rice cooker can also be used for cooking the white rice.
  • Making the Vinegar Mix: The main seasoning of Sushi rice is the vinegar made from fermented rice or sometimes the rice wine. It is mild in taste and adds an exotic flavor to the Sushi. Mix a cup of rice vinegar with salt and sugar. Stir well and place in a saucepan over medium heat, till the salt and sugar are dissolved in the vinegar. You can prepare this seasoning well in advance to make the cooking process easy.
  • Seasoning the Sushi Rice with Vinegar: After the rice is cooked, add the above prepared vinegar seasoning to the rice pot. Now turn all the rice into a glass or a traditional wooden bowl. Mix well with a wooden spatula and let the rice cool down a bit. The mixing of seasonings really well is important so that each the vinegar is soaked by each and every grain of rice. Your sushi rice is ready to be served with the Sushi!!
