However it is not that simple to melt chocolate as it is extremely sensitive to overheating.

Moreover chocolate that is heated excessively tends to form hard grainy lumps and lose flavor. What you need is moderate heat and constant attention to ensure that your chocolate is melted perfectly. Here are some ways of melting chocolates without burning or charring it.

  • Select the chocolate that you need to melt. While the semi sweet and bitter chocolates can be heated at slightly higher temperatures, white and milk chocolates need extremely low temperatures for heating. You can use a candy thermometer to keep a check on the temperatures while heating the chocolate. While melting dark and sweet chocolate ensure that the temperature is not more than 120 degree Fahrenheit while milk chocolates cannot be heated beyond 115 degree Fahrenheit.
  • Use a double boiler to melt the chocolate. Fill the bottom half with water and bring it to a simmer. Ensure that the top of the double boiler does not touch the simmering water. Place even sized chocolate cubes on the top and allow the chocolate to melt. Be careful and make sure that the water does splash onto the chocolate as it can cause lumps.
  • You can also melt chocolate in a large pan or skillet. Heat a pan with water and allow the water to simmer at medium temperature. Place the chocolate in a stainless steel bowl and lower it into the water. Keep stirring the chocolate till it melts completely.
  • One of the best ways of melting chocolate is by placing it in an oven. In a shallow oven proof bowl, place the chocolate cubes. Place this bowl in a preheated oven of 225 degree Fahrenheit and allow the chocolate to melt completely.
  • Alternately you can also microwave the chocolate to melt it. Just place it in a microwave safe container and heat it for one minute on a high. This is however a harsh form of melting chocolate and can result in the chocolate losing its flavor.
