One of the popular and sweetest from the winter squash family, butternut squash is very easy to cook. Butternut squash is a yellow skinned fruit with orange pulp, seeds and a lot of fiber. Butternut squash is rich in vitamin A, B3 and B6.

 

It also contains magnesium, potassium, manganese, iron and a lot of fiber. This squash is quite high in calories too. Butternut squash can be cooked in a variety of ways such as – baked, roasted, fried, steamed etc.

Instructions

  • Prepare the butternut squash – Cooking butternut squash is far easy than cleaning it. To prepare the butternut squash, rinse it under running cold water and cut off the ends using a very sharp knife. Cut the squash into two and scoop out the seeds and fibers.
  • Using a peeler, peel off the tough outer skin. Chop the squash into bite sized chunks. Preheat the oven to 350 degrees F.
  • Clean, peel and chop two green apples.In a baking tray mix the chopped squash and apples. Apply butter. Sprinkle the ingredients with salt and pepper. You can also use cinnamon powder or any other seasoning.
    Cover the baking tray using aluminum foil and bake for an hour.
  • Remove from oven and mash the ingredients using a mixer till it becomes smooth. Serve hot.
  • Apart from the above recipe, you can also simply bake the butternut squash by cleaning and cutting it length wise. Apply butter, salt and pepper over the squash. Pour a little water in the baking tray.
  • Bake for an hour in a preheated oven at 350 degree F. Remove from oven and serve as it is, or by scooping it.
    Cooking in Microwave – Cook the butternut squash as a whole or after cutting it, in the microwave on high for ten minutes.
    If cooking it as a whole, make small cuts on the surface of the butternut squash.
  • You can also stir fry the butternut squash chopped pieces in a skillet and test for the doneness using the fork.
    Make a soup by boiling the chopped butternut squash pieces along with chopped onions, carrots, vegetable stock, salt and pepper. When the squash pieces become tender, remove them and run in a blender to make a smooth paste. Put it back in the pot and cook. In five minutes remove and serve hot.
