Vichyssoise or vegan leek cream

 

 

 

This leek cream is very hot and cold, so it is perfect for any time of the year. And its soft taste will like everyone. In addition, its white color makes it so beautiful that it is perfect for both daily and special occasions.

This vichyssoise can be done in advance and taken in perfect conditions for the day of special food or dinner, so it will also be a good idea if you want to have more tranquility that day.

Serve it in vases, with a few drops of extra virgin olive oil and a crisp of bidders. You'll see how good and how elegant the cups are at the table. It does not have dairy between its ingredients, so it is perfect for vegans and for intolerant or allergic to milk.

To prepare this rich leek cream, you will need:

  • 60 g extra soft virgin olive oil
  • 500 g puerro (only the white part)
  • 500 g patata
  • 1 l vegetable broth
  • A pinch of nutmeg
  • A pinch of white pepper
  • Salt and pepper to taste
  • 200 ml liquid vegetable cream for cooking

One. Clean the puerros well under a jet of water and remove the first layer. For our recipe we will only need the white part, cut in slices. Do not throw the green part: you can keep it clean in the freezer for when you need to make, for example, a vegetable stock. Wash, peel and chop potatoes into pieces.

Two. Dry the pork in the extra soft virgin olive oil, on very slow fire so that it does not take any color. When the soft pork is added the potatoes and the broth. Raise the fire and cook for 30 minutes until the potatoes are tender. Then crush everything well with the blender and when it cools down a bit, add the liquid cream to cook.

3o. Cry the cream with the strainer to remove the strands. This delicious pork cream can be hot as any other vegetable cream, but cold is also very good.

If you want to do it in Thermomix, it is as easy as following the following steps:

One. Put the pork in the glass and prograte 4 seconds/speed 5. Put the remains down with the spatula.

Two. Add oil and program 12 minutes/Varoma/speed 1.

3o. Add a glass of vegetable broth and program 1 minute/ progressive velocity 5 to 10 so that the puerro is completely crushed. A stroll through the Ribera Disfraces para niños y adultos

Four. It incorporates the chopped potato, salt, pepper and remaining vegetable broth and program 20 minutes/100o/speed 1.

Five. Wait a few minutes to lower the temperature to 80o and program 1 minute/speed 7.

Six. You add a pinch of nutmeg and cream. Program 8 minutes/90o/speed 3.
