Tuna is from the mackerel sea family and is very high in fat content. That doesn’t make it a bit less popular among other seafood or meat food items in restaurants.

Tuna is usually sold as steaks in stores or is found tinned. Tinned tuna usually contains any one of the following – water, brine, vegetable or olive oil.

Tuna needs high heat for cooking because it is more prone to drying quickly. Some of the popular tuna types are – bluefin (very expensive), yellowfin, skipjack, bonito, albacore etc. Tuna can be grilled, smoked, baked, skillet fried or simply eaten raw (sushi grade tuna). Follow our instructions to cook tuna at home in many different ways.

Instructions

  • Preparing the tuna – No matter which method you choose to cook the tuna, it has to be marinated first or applied with a good rub.
  • Marinade – In a bowl add the following – juice of two lemons, cilantro (two tablespoons), soy sauce as per taste, garlic powder (one teaspoon), virgin olive oil (two tablespoons) and salt-pepper mix as per taste. Mix the ingredients using a mixer or food processor and put in a plastic bag.
  • Add tuna to the plastic re-sealable bag and marinate for thirty minutes.
  • Grilling the tuna – Preheat the grill to medium-high.For grilling tuna there is no need for a fish basket. Rather cover the grill using aluminum foil first.
    Remove the marinated tuna from the plastic bag and lightly apply olive oil over it.
    Reduce the grill temperature slightly and place the marinated tuna on the grill.
  • Turn the tuna using a spatula (don’t use tongs) after the first four minutes of grilling. Wait for another four minutes. When done tuna will turn opaque. Remove from the grill and cover with foil for five minutes.
    Serve hot.
  • Frying in a skillet – Heat the skillet on high. Pour olive or vegetable oil in the skillet. Place the marinated tuna in the skillet and wait for four minutes. Turn and cook for another four minutes. Remove and serve hot.
  • Bake the tuna – Preheat the oven to 425 degrees F. Apply olive oil lightly over the marinated tuna and arrange them in a baking dish. Bake the tuna for fifteen minutes and test for doneness. Half-way during the cooking turn the tuna.

  • Fresh tuna steaks should be always cleaned using paper towel and should never be washed.
  • Frozen tuna should be thawed first and dried using paper towels.
  • Always store tinned tuna in a dark place and drain the tinned tuna before use. Transfer tinned tuna to an air tight but non-metallic container after opening.
