Gravy sometime becomes an essential component of your cooked meat and other side dishes. Just like you were careful in cooking the meat, you should be equally careful about making the gravy.

The gravy should be optimally flavored so as not to rob the taste of the meat. Gravy can be made using the stove top method or by using microwave. It can be made thick or runny. The gravy made should be free from any lumps and should be seasoned to perfection. Follow our guidelines to make gravy for your roast at home.

Instructions

  • Ingredients for making gravy – Two tablespoons each, of the following – pan drippings and flour. Further you will need atleast two cups of stock – Beef stock for a beef roast and chicken stock for other white meats.
  • Stove top pan gravy method – Set aside the meat from the roasting dish to let it cool. Drain about 2 tablespoons of the fat from the pan.
    Apart from the fat you will also get some brown residue of the meat.
  • Put the pan on stove top and let the meat drippings or fat get heated over medium heat. Let the liquid come to a boil.
    Add the flour slowly to the liquid once it starts to boil. Stir the mixture well to combine the fat and the flour.
  • During this time reduce the heat and continue to stir till the flour starts to brown. Use a whisk for better results and mix the entire browned residue from the pan bottom.
    Pour the stock slowly to this mixture.
  • Whisk the mixture and let the solution boil. You will see the solution getting thick after a few minutes of cooking. Continue to stir the solution.
    Add salt and ground black pepper as per taste. Your gravy is ready to be served.
  • Instead of the stock you can also add milk or meat juices or simply water. Add just one cup of meat juices or milk. Some prefer to add a combination of wine and stock too.
  • Tips and Warnings

     

  • You can add finely chopped fresh herbs to the gravy after removing from heat.
  • You can also try adding Worcestershire sauce or soy sauce.
  • Always use a wire whisk to mix the solution. It will also help to avoid lumps in the gravy.
