To prepare the teriyaki sauce, you will need about 2 cups of dark soy sauce. Ensure you buy a good quality soy sauce which is robust in flavors as this forms the base for a flavorful teriyaki sauce.
In a pan add the soy sauce and then add 1 cup of sugar. The ratio of sugar to soy sauce depends on your taste. If you want a sweet-tasting teriyaki sauce, try increasing the quantity of sugar a little. However, teriyaki sauce tastes best when it is mildly tangy. Hence, maintaining the ratio of soy sauce to sugar at half will make your teriyaki sauce taste great.
You will need about ½ cup freshly peeled ginger and 2-3 cloves of garlic. Put both these ingredients in a blender and blend till you obtain a fine paste. You can omit the garlic if you do not prefer the taste.
Now, add the fresh ginger-garlic paste to the soy sauce and brown sugar mix. Stir the sauce and blend everything together. Let the sauce rest for some time so that all ingredients and flavors blend well.
For added flavor, you can add some freshly chopped green onions to the sauce. If you feel that you want your teriyaki sauce to be thicker in consistency, add some corn flour dissolved in warm water. This will also give the sauce a nice shiny glaze.
