Instructions

  • To make mango souffle you will need 2 packets gelatin, 2 cups warm water, 4-5 spoons sugar, 2 eggs, 2 cups sweetened mango puree, ½ cup fresh mangoes sliced into small pieces, 3-4 cups heavy whipping cream, and mint leaves for garnishing. It is best to use canned mango puree available at Asian grocery stores while making this dessert. This canned puree is made from a delicious variety of Asian mangoes which will impart a rich taste to your souffle.
  • Begin making the dessert by soaking the gelatin in warm water. Stir well till the gelatin dissolves in the water. Set aside and allow the mix to cool. Take the heavy whipping cream and whisk it thoroughly till becomes thick and airy in consistency. This is an important step of making the souffle. Ensure your whipped cream becomes fluffy enough to obtain a smooth and silken texture for the souffle. You can use an electric blender to whisk the heavy cream well.
  • Next, take the canned mango pulp and add sugar to it. Gently whisk the mango pulp so that the sugar dissolves well. Separate the egg whites and egg yolks. Take the egg whites in a large bowl and whisk them thoroughly using an electric blender. The egg whites must form stiff peaks. This will ensure that your souffle sets well and attains the right consistency.
  • Take the bowl containing the whipped cream and place it over another bowl containing ice. Gently stir in the mango pulp containing sugar into the whipped cream. Mix the mango pulp very well with the whipped cream. Ensure you use gentle hands to mix the mango pulp with the cream. After this, add the cooled gelatin to the mango pulp and cream mixture. Blend all these ingredients very well. Use the electric blender at low speed to mix these ingredients very well together.
  • Gently fold in the egg whites into the mango-cream and gelatin mix. Pour the mango souffle into a round-shaped vessel and refrigerate it for at least 6-8 hours. Once the dessert is set, remove it from the refrigerator and garnish it beautifully.
  • To decorate the mango souffle, slice fresh mango thinly and arrange the slices along the perimeter of the round mango souffle. Decorate the edges of the dessert with sweetened whipping cream. Arrange few fresh mint leaves on the center of the souffle. For added flavor, you can soak the fresh mango slices in maple syrup and lemon juice before using them on the dessert.
