  • Selecting Peppers: The first and the most important step before you start your roasting process, is to select and pick the best and the freshest peppers from the store. Choose peppers that are firm and tight yet have a smooth skin. Avoid limp looking bell peppers as they might give a stale tatse to your recipe. The peppers should have a smooth and blemish free texture from outside. Avoid the ones with cuts or blisters and holes.
  • Roasting peppers on Grill: One of the most traditional yet professional way to roast your bell peppers is to do them on grill. The method is simple and easy. Wash and dry your pepper and put them on them directly on top of the grill rack. If you wish you can cut the top crown of the pepper and can retain it if you want. Keep turning the pepper frequently with the help of a tong so that it doesn’t gets burnt. After the entire skin has turned black remove and let it cool in a pan. Once cooled you can remove the skin immediately for using it in further recipes.
  • Roasting peppers on direct heat: One of the most popular ways to roast peppers is to cook them on a live fire over a gas burner or charcoal heat. It gives the peppers the most original smoky flavor. Apply a little olive oil to the peppers and turn the heat on. Place the pepper directly over the heat source and keep turning it with tongs, till the skin blackens and chars. Put the peppers in a paper and roll them in. After 15 minutes, take them out and peel off the skin and scoop out the seed clusters.
  • Roasting Peppers in Oven: If you have an oven at home you can do a hassle free roasting without much involvement during the cooking process. Preheat the oven to 350 degrees Fahrenheit. Grease the tray and brush the peppers slightly with oil. Once the oven is heated place the peppers on the tray and let them cook for approximately 20 minutes.
  • Turn the sides after 20 minutes and let them stay inside for another 15 minutes or till the skin appears blistered and black. Take out let them cool down. Tear the skin and scoop out the seeds and the stems.
